Spending a week down there next month, looking for some recommendations on rides in/around the area.

I brought my bike down on vacation a couple of years ago and loved the riding. Start with the SLO Bike Club website. https://www.slobc.org/local-rides/index.html I enjoyed riding from SLO to Pismo along Corbett Canyon plus riding out to Avila Beach.
