What would be the best way to do some mountain biking outside of Seattle?

There's a shop in Roslyn, near Cle Elum; you can ride in the Salmon la Sac, Teanaway, and Blewett areas from there.

There's a shop or two in Leavenworth, and lots of great riding in the surrounding mountains and hills.

Methow Cycle and Sport is a great shop in Winthrop. Fantastic riding there.

I bet there are shops in North Bend and Issy, and maybe somewhere decent to ride too?

"outside of Seattle" encompasses a very large area. If you can be more specific we can help.

Compass outdoors in north bend. I know a few people who work there, they will set you up.

I know I'm chiming in a little late but just in case someone finds this info later...

I second on the Compass Outdoor Adventures in North Bend. I believe they do trail head drop-off and pick-ups as well.
