I personally would go for a Turbo saddle in black, with black bar tape and gold chain. As for the brake I think you'll have to go with one of those Keirin brakes that bolt on to the fork leg.

The Checpoint ALR will unnoficially fit 27,5x2.2 tires, trek says you cannot do it but my bike is fine. I have seen the SL carbon model also setup with 27,5x2.2 tires.
