Would something like this fit on the back of the Sun seat?

Ride your bike to a local store, and have someone take a pack outside with you and see if it will.

LOL! I am slapping my own forehead as I sit here....

Yeah I will likely do that this week. I was unsure if the clips are too small though, or if they have different sizes. I really like the look of that particular bag and its size also.

The top tubing should be fine. I loaded over 15kg in my bag without any trouble. However, if you're heavy, watch the bottom of the seatback tubing, about where it attaches to the frame: that's where all the load you exert when pushing against the seatback concentrates. With a heavy bag and a heavy rider, you can crack the tubing there. It cracked on my BikeE and I had to re-weld it. If you really want to load the bag, lower it so the bottom of the bag rests against the frame, and part of the weight is taken off the seatback.
