I generally notice a dropoff if I go more than about 1-2 days without a good ride. YMMV.

If you do nothing other work eat sleep then:
your fitness starts to drop off after 7 days
at 10 days you will start to lose your fitness at 3 times the rate you gained it.
If you do rides/runs/workouts every second day then, depending on how you train and your initial fitness level, the drop off will either be much slower or none at all.

once you stop cycling out your muscles start to recover, after doing so your fitness starts to drop so this can be after only a few days but this is offset by you recovering, i have often been in great condition after not cycling for a few weeks. This is why you should tapper off before a race. If you do high intensity riding a few times a week but stop doing long distance, it will take up to 16 weeks before your endurance levels start to fall.

They used to tell us at OTC that fit athletes can spend 72 hours of rest/recovery then you start going backwards in terms of fitness..

I heard something similar to what socalrider said.
After 72 hours(3 days for you non-math inclined) your cardio fitness begins to drop.

I can take 2 days completely off the bike and feel good the third day on a ride. Three days and the ride on the fourth day is rough for about the first half, but the legs get better. Four+ days completely off and I might as well take the rest of the month off.
