I'd have to looking around, but I recall that the Portland Trailblazers coach (Terry Stotts) recently got a semi-custom bike through a local shop. Like a 66-68cm Parlee...something like that. He is about the same height.
EDIT - here it is:

Pretty legit too (but relaxed). Full 9000, ENVE rims and stem, 240 hubs...

Someone needs to get Lebron a custom bike. He looks like he's riding a kid's bike. And apparently he's got ownership shares in Cannondale so you would think he could get a 68cm Evo

Bill is a legit 7'. Bet he can't find cycling shoes, but you'd think he could afford to have some custom made.

A lot of pros ride down a size or 2. Or 3 or 4. Tom Boonen, Adam Hansen etc. From the article, it seems like the point of it was just to get him onto a frame where he didn't need a setback seatpost and a footlong stem to not be banging knees and elbows.

Shorty. Remember former NBA-er Shawn Bradley? 7' 6". He had his custom trek stolen:

But aside from that: What is it with celebrity custom bike builds? They are always in mega-relaxed mode. The bars are so high that if you raised them up anymore, they'd be lying down in a recumbent position. There's a shot of Conan O'Brien on his custom bike as well. They all have headtubes the length of my top tube.

Exactly. I'm not a pro, but I'm 6'2" and all my bikes are 56's. I could rock a 60 if I wanted to, but I would hate the fit.

Of the ones on this page, obviously Bill Walton is in his 60s, so is entitled to ride a bit upright.
Bradley looks like his headtube and stem are stacked, but he's also showing plenty of seatpost, and has a good couple inches of drop from saddle to bar. I'd say he can get pretty aero (or as much as his large upper body will allow) if he decides to go nose-to-stem.
