Oof. I'm going to need some quality time with my friend the rolling pin. Legs are a little ouchy after the ride - seeing a dark knife of clouds comin' towards you is evidently good incentive to ride a little faster.

There is a banana key lime pie at Tony Mandola's here in Houston that just blows every other version right out of the water. I usually am a purist about this kind of stuff, but I have honestly never found one as good as that.
The old-time key lime recipe where you didn't try to cook the eggs and just let the lime juice thicken them up was the best, but nowadays you can't find it anymore on the back of the condensed milk can. Too much CYA going on. I wonder if anyone still has a copy of that. I mean the actual recipe off the can from say 20 years ago.

Lamenting about the disappearance of the "raw" egg key lime pie recipe reminded me how stupid it is that we don't irradiate certain fresh foods with Cobalt 60 gamma or e-beam or X-radiation for safety. Eggs are a prime example. If we cold-sterilized eggs with gamma irradiation, you would never have to worry about how well cooked the yolk was. Runny would be fine. And we could make the lime thickened version of key lime pie without a care. And so on. The American public just can't accept it. They are afraid they will glow in the dark.
