Greg LeMond’s Complete Book of Bicycling was my bible years ago

I’m sure it’s a bit dated now but still a worthy read.

I like many of the ones already suggested.

I'll add:
"Etape" by Richard Moore, a great stage by stage review of Tour de France history.
"The Secret Race" by Tyler Hamilton, I know the OP doesn't want to read about doping, but this is a fascinating book and likely the best depiction of life in the peloton fifteen years ago.
"We Were Young and Carefree" which is the autobiography of Laurent Fignon: Fignon is a great story teller and definitive French, a good portrait of racing just prior to EPO destroying everything.
"Pro Cycling on $10 a Day" by Phil Gaimon which gives insight into being an American pro in a sardonic and self-deprecating way.

I really enjoyed reading Tim Krabbe, "The Rider". You do not have to be a racer to like the story. Very well written, entertaining and informative. Jens Voigt, "Shut Up Legs" was OK. It had some really good parts in it and it gave me more appreciation for the domestiques of bike racing. It was not very well written and parts of it were a bit drawn out. Just today I received, form Amazon, "Need For The Bike" by Paul Fornel. I have heard of , and seen, the book before, pretty hightly rated, and I finally went ahead and bought the paperback. I guess I will start reading it this evening.

While it's more about bikes than cycling, Robert Penn's 'It's all about the Bike' is a delightful read, too.

I liked this book a lot and if you search, you'll find a video on Youtube that mirrors the book. A bit of the cycling history was a little slow in spots but the authors attempts at building his "perfect bike" were interesting, enlightening and entertaining.
