2 Canyon Ultimates - Wondering which one to get?

Thanks for all the responses here. I've never expected to see this many.
Geometry wise, I decided to go with the Ultimate because my gravel bike (the Canyon Grail) already has a relaxed geometry. I have done a couple of century rides with the Grail and I can definitely say it's the most comfortable bike I've ever owned. My old road bike is the Trek Madone that is much more aggressive than my Canyon Grail. Probably because of my yoga practice (been doing it for more than a decade), flexibility is never an issue for me. I can stay in the drop bar for hours on end, with a couple of breaks here and there.
Again. I want to say thank you for all the inputs here. I read every single one and they are all useful.
An FYI, I have made my decision and ordered the Ultimate ETAP version yesterday. Cannot wait until the bike arrives.
