When I rode with PenVelo, on their Saturday and Sunday rides, they always did a no-drop, double paceline rollout for the first 8 miles, then the racer group would take off while the recreational/century riders would proceed at a more dignified pace. For me, that was on top of the 8 miles of riding I had to do to get to the meetup spot. They actually had a pre-meetup spot, 3 miles from the formal meetup, that included 2 climbs of about half a mile at 6 or so percent, so if you did that, you'd be pretty warm already - especially if you got to the pre-meetup spot a bit late and had to chase! Ask me how I know.
