Chamois density
What is considered a good density? I notice only some brands post this stat. One is stated as an 80 density pad. Not sure what that means or how it compares.

This is a well known company- read up.
There isn't a single 'good' density because it varies, as it should, depending on activity and duration.
Some of their pads are 40-60. Some are 80-200.

I wouldn't know know good density from bad density if it hit me in the tuchus, but I just did a hilly 3-hour ride, climbing intentionally in the saddle, with a new pair of Voler bibs that has their Men's Comp HP chamois.
So bleepin' comfortable! I had to stand a few times, but because my lower back was running out of juice. Not because my butt hurt.

I don't think one density fits all, not even within the same model of bibs. Hopefully bib manufacturers would know to increase pad density for larger sizes for chubby people like me.

Like you say, one density doesn't fit all. I'm 242lbs (as of this morning...jfc) and I prefer a way less dense Chamois. Can't stand the overly thick ones. Less dense and not as wide (too wide a Chamois bunches up and causes sores).
