Also if I go with the 11 speed crankset, I will need to get a new chain, should I go with an 11 speed chain or 10 speed chain.

And, you're freshly acquainted with the ins and outs of FD adjustment. I vote for the 8000
Also, since it will already be a frankenbike, I'm m sure there's a FD out there that will do the trick.

I ever came across 5800 or 7000 shifters for a good price I would buy them for this bike.

Shimano's definition of "incompatible" ranges from "there is an unverified possibility the shifting might be other than perfect under specific load situations" to "oh it will definitely break". They don't have a term for "It's a little rough but you can ride it fine".

Personally I've had zero issues with mixing 10- and 11-speed cranks. My bikes may never have been as perfectly set up as I read about some, but they were quite good.

I liked Red Bull's coverage a little better, but GCN did pretty decent job (IMO)

If I get a black screen but it has sound, I scroll down to where it says "mirrors" and click on the next number. That works sometimes. If it won't load at all I haven't figured out a fix.
