I prefer to eat vegetarian most of the time, but I love me some grilled steak or a burger from time to time and do not intend on giving that up. Yesterday, my mom brought a fancy honey bourbon pork chop from a local market so I asked my dad for cooking advice, and here's what I came up with. Dad is better at cooking meat than mom IMO (shhhhhh...). I rarely cook anything pork outside of Italian sausage.

white wine deglaze

Honey bourbon pork chop with white wine reduction mirepoix. Served with roasted potatoes, wilted spinach and an Oregon Pinot Noir. Yes I know I over-roated the potatoes.

For a variety of reasons, we are doing our family Thanksgiving feast today, instead of tomorrow. I am also skipping the traditional turkey, and making a prime rib roast. Our initial group of 6 has grown to 14, and figuring out how to make that work in our house took some effort and rearrangement of furniture. It's been a week of stress and anxiety, but I think we are going to pull it off. I'm hoping to do a big MTB ride with friends tomorrow morning.

We had a super wet/messy ride today. The wet roads with lots of leaves made me a bit askeered, but everyone took it easy and the ride went great. Now I have to summon up some energy to wash the Habanero.
