Wrong Stem Size- HELP!
My brand new FSA Road Stem just came in and when I went to install it, I realized that it doesn't fit my bars. I have 26mm bars and the stem must be 31.8 mm. What can I do to shim it, or is there anything I CAN do? Could you please lend me some ideas.

you could try trading with somebody else who wants a 31.8 stem - assuming it's a common length it's probably worth more than a 26.0 stem.

Choices for 26.0 stems are becomming few... I have asked if there is an adapter/shim available at my LBS but they said that there wasn't anything like that on the market... however alot of aero bars actually come with shims to be adapted to either 31.8 or 26.0 ...

You need something about 1/8 in thick to space the bars. You should be able to find something to wrap around the bar. I had a Cinelli stem with a 3ttt bar that I had to do this with back in the days of quill stems. This was don by my LBS at the time (Rod's bike shop in St. Cloud, MN)
