Road Cycling “It is by riding a bicycle that you learn the contours of a country best, since you have to sweat up the hills and coast down them. Thus you remember them as they actually are, while in a motor car only a high hill impresses you, and you have no such accurate remembrance of country you have driven through as you gain by riding a bicycle.” -- Ernest Hemingway

ultegra 9sp derailleur on 5sp cassette

can an ultegra 9 speed derailleur be adjusted to work with a 5 sprocket cassette? or less or more (ie. 3, 4, 6, 7 sprockets?)

If I recall correctly, the derailleur doesn't know or care how many sprockets there are or how they are spaced. If you were to use friction downtube shifters or bar end shifters, I think you could. A 9 speed STI won't work with a 5 speed cassette.
