Hub compatibility (old hubs)

I know everyone's going to yell at me for trying to use old hubs, but just chill. My dad has these hubs and I can't afford a new set of ultegra hubs at the moment.

I wanted a cheap set of training wheels, so I found rims and hubs in my dad's basement. They're Mavic Open SUP rims and Shimano 600 hubs. Both are brand new. I've got the front wheel built up already. I want to make it work with Ultegra 6500 stuff. The cassette doesn't fit, I run out of space with 2 gears left to put on. Can I get a 6500 freehub body and put it on the 600 hub? Could I just skip a few gears? I don't care about having to adjust the derailleur limits when I switch wheel sets, I'd just pay attention not to shift out of my cassette. Would either of these work, and if not, can anyone find a 32 hole 9 speed compatible decent hub for cheap? I've found used 6500 hubs on ebay, and new 36 hole hubs elsewhere for $50, but no new 32 hole 6500 hubs without paying about $100 for them.

Ideally I'd like to use the old hubs to save money.

Why do training wheels need to be ultegra level is my first question.

I don't know the answers, but these folks will: http://www.bikeforums.net/forumdisplay.php?f=10

More info, less snarky, too! :)
