What bike does your S.O. ride?
Well we already know what type of bike YOU have.
What type of bicycle does your significant other ride?
My wife is on a Douglas Precision Ti (from Colorado Cyclist).
But she only rides it about once every couple weeks now.

Specialized Dolce Vita. This is her bike next to mine before her first race. I just got a hanging scale to weigh my new bike, and threw hers on... it weighed less that I thought it would, just a hair under 20.

Wife's CAAD5. Had it for over a year and just started riding it again on the trainer this season with swimsuit season approaching. Haven't been able to get her out on group rides yet, though.

Carbon fiber Pilot 5.2 and an 84 steel Bianchi. Wife has done 3,000 miles the last 2 or 3 years. Maybe 1,500-2,000 for nearly 8 years before that!

My wife rides a Cinelli Unica, it's a real nice satin paint grey. It now has pink deda bar tape to add some colour to the monochrome.

I sent my girl a bianchi like Beanz's SO has, maybe.
10spd Neuvo Record DT shifters and derailers
Modolo Brakes
Gipiemme Wheels, crank, and cockpit.
Cleaned it, polished it, redid hubs, headset, BB, cables
put a honey brown saddle and blue bar tape on.
she loved it.
And then dumped me for some jackass boatbuilder in Maine.
I should have kept the bike.

Right now a school bike club bike (2005/2007 Tourmalet or Alpe d'Huez depending on what's open). I really do wish our frame sizes were at least close. With the amount she has been riding lately she could have a new bike each time I wanted to upgrade if she were taller. As it is I throw my money at tuition instead of bike parts.
