Blowing up means you just expended all your energy but you can kick back and recover quickly. Blowing up usually results in getting droped from the race or ride during peak efforts but you can get back in it. Bonking means you probably failed at eating and drinking properly and used up all your energy stores and are in trouble. Bonking can cause you to almost feel feverish with the shakes and cold body temps. Usually you need to just crawl home after a bonk and it will take a few days to recover.

In my vocabularly, blowing up is when you go anerobic (i.e. above your redline) so far or so long, that you not only can't hold that effort, but you can't sustain any decent effort, at least until you recover. If you really blow up, your toast and can't recover.

Bonking relates to running out of fuel. You've depleted stored muscle glycogen, and the carbs in your system and there's nothing left except metabolizing fat. When you bonk, you're running just on fat, and you can only produce power at low level. When you truely bonk, you don't recover without food, and a long period of rest.
