Coatal ride starting at torrey pines state beach parking lot is always good, you can stay on the coast or go inland up through rancho santa fe then back out to the coast. Cyclovets has a good ride every saturday morning that leaves from the coffee bean in mission valley at 8:15. The JB ride on Sundays, pretty much every bike shop sponsors at least one ride, there are just to many rides to list.
San Diego has many organized rides pretty much every day of the week, you shouldn't have any trouble finding them

Look into:
- Riding to the top of Cabrillo National Monument
- Riding along Highway 101 to Oceanside and back
- The SDBC (San Diego Bike Club) ride departing from UC Cyclery at 8am Saturday morning, and doing the C or better ride - it goes north through Rancho Santa Fe and ends going south on the 101
- Lots of other clubs, if you're into that sort of thing.
If you're more into punishment and hard climbs, and have access to a car:
- Going inland to East County, and climbing Dehesa / Japatul
- Climbing Mt. Laguna
- Climbing Mount Palomar
Hope those are some google-fu leads...
