You stop.
You squeeze your nose shut gently to make it stop, maybe wait 20 minutes or so.
You get the paper towels out of your trunk bag and clean up as best you can. If you don't have any, you stop at the local convenience store, fast food, your house, or wherever, and clean up as good as possible.
Then you go back and ride or whatever it is you were doing.

If you're in a dryer place than normal, or higher elevation, that's probably the cause.
If it happens a lot, check with your doctor.
