Slim pickins. I've got a 26.0 Thomson Elite that's like a bank vault. Looks nice, but 200g and $68 may not fit your (unspecified) limits.

anything out there besides thomson? probably what I'll end up getting, just want to see what my options are.

Not many made now, but look on ebay for NOS and used ones. I got a Ritchey Pro for about $20 which is 17 degree 26.0 and it works great.

there are shims that will reduce 31.8mm to 26.0mm

I've had bad experiences with bar shims, so I avoid them if possible. They slipped if I didn't tighten the bolt a lot, and then cracked the shim in half if I tightened it any more.

If you could use -17* stems, there are a few out there. Oval Concepts and Ritchey both makes stems in 26mm, for that angle.
