ps.. I see one guy has no cage. I'm guessing that's why his buddies have to carry two bottles...lol. If it's in his jersey I won't comment because I wouldn't want to anger guys that carry 10 pounds of crap in their jersey. I guess there's a thread on strange crap that people carry in their jersey.

I've always used two and sometimes throw a smaller third one in a jersey pocket on warm days.

I still feel that all threads should auto-lock after one month of no activity. Usually the topic has run its course by then. Zombie threads would be a thing of the past, and so would many of the arguments that go along with them.

Always two cages. At least one bottle, sometimes two. Depends on the weather and planned ride length... or if I haven't planned a route at all. For instance if I leave the driveway and just head West, I'm taking two bottles, because I don't know where I'm going.

Depends on the ride, most of the time 2 bottles. Better to have enough. I have had the need to fill both up on a ride so definitely a situational thing.

Have two cages but mostly use only one because short rides are all I can do right now (family obligations). However, I bought two as you never know when that specific bottle cage will still be manufactured and my needs might change in the future..

3 for 3 of my bikes, 2 for the others. (Workhorse city/rain/winter fix gear isn't getting a third cage and the Mooney - not until I paint it again.) DT, ST and under DT. Long rides on hot days with just stops to pee and change bottles, 3 get used. Long days spring and fall or in not so great condition, the ST bottle holds coffee, On my fix gear which can be a trial for my feet on long mountainous days, the bottom cage holds sandals. Taking cages off is fast, so most of the time only two cages are on.

Two cages, one bottle. Two bottles for longer rides. On long solo centuries where there are no stores, I add a third bottle in back of my jersey. I have done 20 mile segments where I use up all three bottles due to big climbs.

Two cages on my road bike, one on my mountain bike. If riding outside I also have a 3 liter hydration pack on that acts as a source of cold water as well as a small back pack to carry the Nuun or Hammer nutrition hydration tablets and small trinkets to bring home 
I use a Geigerrig hydration pack as they are easy to fill, clean, and are pressurized with a squeeze bulb so they double as a squirt gun when riding with my oldest son

I've gone since 2014 with 1 bottle because I can only fit 1 cage on my small size Giant. When riding the river trail, I did finally find 3 spots that have spring water coming out so I could refill. Otherwise, I was on rural roads and didn't know where any water is.
I just put a rack and bag on the back of my bike. Now I carry another bottle of water there.
I always had at least 2 bottles of water in the car as I drove to my rides most times. I drink a lot of water all day long so I'm never dehydrated. I can last quite a while with just the 1 bottle and rehydrate when I get back to the car. It's nice now not having to ration the single bottle though.
Heck, at work in 9 hours, I'll drink the 3 liter bottle I use to fill up at the water coolers and have at my work station and my work station is in an air conditioned office. I'd carry 6 gallons of water on the bike if I could and probably drink it all even on just a 2 hour ride.
I carry more on the kayak just because I can.

90% of my rides are under and hour, 15-20 mile fast workouts.
I only have 1 cage and most of the time I don't use it.
I hydrate before I leave and when I get back.
If am going out more than 1 hour I'll take 1 bottle.
Not everyone uses their bike for multi-hours long 50-100 mile rides.
