Impressive, but he's a pro rider and rightfully so.
Not someplace you want to get a flat.

Now is probably a good idea to put in a disclaimer.

Yeah, 100km/hr is outside of my comfort zone for sure. My sponsors require me to show up physically able to perform my tasks. They are actually my employers but "sponsor" sounds faster!
My fastest is 78 km/hr in a paceline and that was plenty fast enough for a recreational cyclist.

Darned impressive, and it shows more skill than I will ever have. Still, if I had my choice, this https://www.youtube.com/watch?v=ttz5oPpF1Js would be my preference.

That clip made my testicles shrink up.
When he shook his knees at 5"30, was he just trying to stay loose or was he fighting vibration or wheel wobble.
Dumb question. Just trying to make conversation.

I descend poorly... but...
...he didn't have my biggest fears to worry about - oncoming traffic (prev. noted), gravel, or potholes (presumably swept/fixed before TdF).

Actually, in Greece I got better at long high speed descents on long mountain roads. The cars would catch me on the straight stretches, but interestingly enough, with very light traffic and good sight lines (I could typically use the whole road on the high speed downhill corners in the mountains) I could actually out-corner the cars on the bicycle (non-sports cars not driving fast that is). The key to descending like Cancellera does in that video is understanding bicycle handling dynamics and lots of experience bombing major descents.
I'm not saying I can descend like that, just that I got considerably better at it after a couple of weeks in the bigger mountains on quiet roads.

The descents here in the NE tend to be steeper and shorter, and it's hard to let it go with abandon because of the constant danger of a 150 lb deer (think squirrel only larger) T boning your bike weenie ass @ 50 mph. The descents I did in Greece were more similar to what you see in the Cancellera video. No animals to worry about, good sight lines (no trees to block some errant bambi). Here the friggin deer literally appear instantly from behind pine trees and roll over the roof of your car (happened to me last year). I wouldn't want that to happen on a bicycle.
