Tube Stem Length
Have a very newbie question. How do you determine what length stem you need when buying a new tube. I have Bontrager SSR rims and 700 x 25c Bontrager Select tires.

I'm assuming that you are talking about the stem length on the tube correct? aka: the valve length of the tube? Bontrager SSR rims are pretty shallow so you could just buy just any type of tube that fits the wheels. Longer stems and/or valve extenders are only needed for deeper rims.
