Help picking new bike!

Help picking new bike!
For the sake of clarity I am going to give you the background on my decision to buy a new road bike.
For the past several years I have been using a hand me down bike from my uncle, a Fuji Del Ray (20 years old). I loved that bike! Recently I was involved in a car accident with that bike and the damages exceed the worth of the bike (in my local bike shops opinion). The insurance company (after a long very very frustrating fight) gave me $300 for the bike. So now, I need a new one but have very limited funds to buy one with. I have been pricing new bikes and realize I am going to have to spend in the ball park of $700.
I used my bike for weekend rides (between 30-40 miles) in the Phoenix Metro Area as well as commuting to school and infrequently for triathlons. So I need somthing reliable. I am used to riding a men's bike (I am almost 6ft tall) so I would prefer to get another one.
I have been driving around to my local bike shops, test riding bikes and am overwhelmed with all of the choices. I have no idea what brands will best fit my needs and each shop sells different brands so I am having a hard time finding someone with bike knowledge to give me a good, honest opinion.
The bikes I have seen (and liked) so far are the Schwinn Fastback and Trek (I tested out a nicer model and will be trying out the 1.1 tomorrow once the shop puts it together). These are pretty much the only options I have found in my area so far- lots of mountain bikes here but not a lot of road bikes!
I welcome any opinions on what bike you think would be a good option for me! Thank you for your help!

In your price range, I would look for something used. You can usually find a higher quality bike that someone bought and never used. This one is probably a little big for you, but it sounds close to what you are lookiing for.
