What's your cluster?
I run a 12-25 or 11-25 on all my bikes, the one exception is my Zipp 404 tubular race wheels, those have an 11-23. If I'm racing or on a fast group ride like Nyack, even when climbing there really isn't a call for that 25; if you have to bail to the 25 you're going to get shelled. For other rides the hills around here (particularly Mt. Doom) are too ball busting for your granny gear to be a 23.
I do like the 11-25 set up that they have now on the 10 speed 7900 and Ultegra 6700 cassettes. Not much need for that 11 I suppose, but it does give you some more oomph hammering on fast descents.

Flat roads, compact cranks, 12-27 on all 3 sets of wheels. Never max out my 12, even when I TT and hardly use the 27 even.
Can't actually see a need for 10 speed really.

i'm waiting on the 53/39 ultegra ice grey sl, then i'll throw on the the new 11/28 in back w/ a new chain.

Race configuration: 12-23 + 53/39. Training: 12-25 + 53/39. Commuting/ touring: 12-25 + 50/34. Trip to the Alps: 12-27 + 50/34.

Pretty much all flat around here, when I can get out, and I run a 12-25. Wish I had gone with a 12-23 though. With a 53-39 crankset. But I don't compete. 3.5 hours till i get off of work. Yeah!

I've never found the need for anything beyond a 39 x 25, although there have been a few times when a 27 would have been nice.

12-25 with 52/39
39/25 is rarely used and only when i want to take it really easy for a couple of nasty short steep hills near the end of my route. When i use it i get passed by little old ladies with baskets on their bikes but i have no shame.
52/12 I have never been in this except when i try to see if i can get up there and it never lasts for more than a few seconds before the downhill runs out.
i could do most rides on a single speed realistically.

used to run 50/34 with 12-27 in the mountains where i live. moving up to a 53/39. A compact was really useful though, never had to switch out of 50, but was limited in downhill/flat power.

53/39 with 12-25 in the back. I do have an 11-23. Mostly short hills here so it's all I really need.
