I put studded tires on the mountain bike and hit the single track. If you've got a 'cross bike or a touring bike you can also put studs on and ride on the road. Unfortunately I don't think studded tires will fit my (or most) road bikes.
BTW, the cold isn't a problem because you put out so much heat when you ride. You just need to dress appropriately. The coldest I've ridden is 6F, and it was comfy. Hard to keep my water supply ice free though...

I've really got to HTFU.
I'm heading to Finland for a year starting in January. I plan on bringing the bike & getting a trainer.
I'll ride on cold days provided the roads are clear and will also be giving XC skiing a shot.
Sooo looking forward to the Finnish summer where the days top out at less than 80°F and there's plenty of daylight

Back in the good ol' days, before freeriding was even a term (we just called it downhill), I used to spend hours in the winter screwing little spikes into my tread pattern to help on snow and ice. It actually helped, although you couldn't get over the feeling that it was more controlled skidding than riding. Anyone try this on a road bike (or at least CX) when there's some packed snow on the ground?

Beer in the bidon is your friend in the winter. My best winter rides are when I consume one bottle of water early in the ride before it freezes and then switch to a nice porter or stout for the second bottle.

My biggest complaint is the short days.
Down here in Low Country Crackerland some of the best weather is in December and January. For the two or three days when it's below 40F I'll just curl up with a good book and some hot chocolate. Got to take a break sometime.

I have ridden down to about 20deg F (-7deg C). Starting about 65deg C (18deg C), I start with the arm warmers, then a little cooler comes knee warmers, and so on. So far I only have the clothes to comfortably ride at about 20deg F. With the days getting shorter, ride in the dark during the weekdays since it is really the only time I can ride after work. I have bright lights and blinkies for that. I do not however have studded tires so if it snows or is icy, I ride my rollers.

I'm good down to about 15ºF. Happily we get very few days around here mid-winter where it's not warmer than that by noon.
