A good photographer processes the image until it reflects his vision of the subject. Optical noise captured by the sensor can be easily eliminated. Why not use the technology to create better art?
Or, in the immortal words of Paul Simon:
Kodachrome
They give us those nice bright colors
They give us the greens of summers
Makes you think all the world's a sunny day
I got a Nikon camera
I love to take a photograph
So mama don't take my Kodachrome away

And with all due respect to your opinion, Art is defined as: the expression or application of human creative skill and imagination, typically in a visual form such as painting or sculpture, producing works to be appreciated primarily for their beauty or emotional power.
Which means I can do whatever I want with my photos, because "you are not the boss of me".
