Can you use Centaur 10sp with 105 cassette?

Title says it all so you don't have to buy Campy wheels.

You don't have to buy Campy wheels. You can probably swap out the freehub body. Get you a Veloce cassette from PBK for a little over $50...

That looks like it's for mixing derailleurs but what if everything but the cassette is centaur?

Yes.

Edit: Campy 10-speed shifters+derailleurs will work with Shimano/SRAM 10-speed cassette. It isn't optimal so it's up to you to decide if it's good enough.
