New Pedals and seat height

For the last 4 yrs I've been riding Shimano SPD pedals (carry over from mtn bikes days), I just bought a set of Look Keo2 Max, and trying to figure out the best way to ensure that during the switch over I properly adjust the seat height for the stack difference. Is there a best practice, or do I just switch out pedals/cleats and adjust seat sitting on bike as I did the first time. I have had 0 problems with the current set-up minus the pedals starting to make a lot of noise. Thanks.
