+1 for Powermeter for gauging efforts. Definitely a little bit of an investment, but well worth it for anybody getting out ~3+ times/week and doing any sort of training.

So, you must make friends with the wind. It won't harm you. It gives you an opportunity to train faster, work on lowering your anxiety, learn to concentrate in other things beyond speed.

I have no hills nearby so wind is my closest analog.
Downshift as needed to maintain cadence and think of how fast the ride back is going to be.

big and powerful guys are relatively less affected by winds - so try working yourself in that direction.

A wise friend once opined that the difference between an experienced cyclist and a rookie is that the rookie complains about the hills and the experienced cyclist complains about the wind. Maybe that will make you feel better, that you're complaining about the right thing. I'm a tourist and when faced with days or weeks of headwind, I just go slower and try to enjoy other things. It's your choice--you can be in a good place or a bad place.
