converting 27.1" to 700c....total crapshoot?

converting 27.1" to 700c....total crapshoot?
found a good deal on a bike with 27.1" wheels, but i am planning on building up and using 700s. i've read few posts regarding the conversion, and it seems as though it's pretty much luck of the draw. but...is it always possible? i haven't seen any "nope, couldn't do it" posts. just wondering, before i pull the trigger.

I did it with my Cannondale and had no problems. As long as the brake calipers are long enough. I guess it could affect the handling a little bit, but I have not noticed any difference.
