Major problem with test rides

Notices
Road Cycling “It is by riding a bicycle that you learn the contours of a country best, since you have to sweat up the hills and coast down them. Thus you remember them as they actually are, while in a motor car only a high hill impresses you, and you have no such accurate remembrance of country you have driven through as you gain by riding a bicycle.” -- Ernest Hemingway

Major problem with test rides

So here's my problem. Looking to buy new road bike and i'm taking everyone's advice by not just picking a bike I like but trying to test them out first. Thing is i'm a shorty, like 5'5". There are plenty of bike shops around however i spoke to 4 so far and none of them have the bikes i'm looking at in my size. So how accurate of a test ride can I actually get. Really more or less narrowed it down to two I like the Defy and the Caad 10. Both have 105 although the Caad is about 400 more. I have read so many positive posts about the Caad that I can't see how I'd go wrong. So i'm a little stuck between a rock and a hard place right now.

Do the shops have any in stock that are within a size or two, positive or negative?

I'm 5'6, and ride a 53cm for my touring bike, and 50 on my rando bike. Both fit perfectly fine with just a couple of tweaks to stem length and seatpost offset. If you can test ride something in the ballpark, you should get a decent idea of what the "correct" size will feel like.

I am 5'4'' and I ride a Caad 9 48cm. I also ride a Giant Defy but is is a XS (43cm) but both bikes have the same 51.5 horizontal top length. So you have to take that into account
before you decide.
