What kinds of Shimano Dura Ace and Ultegra Cassette Cogs do I have????

I have a lot of new or pull off cogs from Shimano Dura Ace and/or Ultegra from cassettes.

Thing is that I cannot tell which type of cassette they belong to.

Any way to know what kind of Dura Ace or Ultegra cogs I have?
6xxx or 7xxx??
The colors of the cogs vary too...brown to grey to polished.
Any significance or way to determine category by this?

Is this accurate for two letter stamps found near the center of the cogs?

I'd try this one in the Bicycle Mechanics subsection as well. It might also be best to contact your LBS to see if they have some professional feedback.
