My RPM's increase, my speed increases and my power output increases when I get into a aero position on the SPIN bike inside. Still have not figured this out exactly as to why? It must be putting me into a position that recruits more muscle?

Well yes. Power will increase with the same pedal force at a higher RPM. This is where technique comes in...what Eddy talked about spinning a big gear at high RPM and few if any could do that better than he.
If you have a powermeter and see bigger numbers in an aero position then I think what you wrote is correct...you are recruiting more or different muscles. I don't have a Power meter but my stroke feels most powerful in the drops as well.

Not too sure, but when I go fast I make sure my quads are hitting my ribcage and my chin is a few inches from my stem and I go faster regardless of my power output.

I know the most powerful position for me is standing with my elbows in the drops, in a good angle to engage the glutes. Whatever position uses the glutes most is the most powerful one.
