The stx freehub body should work just fine. The ridges don't extend all the way to the end so that you can fit an 11 tooth cog on it, but anything (12, 13, 14 tooth etc) will fit.

It should work just fine. To get that 13 tooth off you need either 2 chain whips, or try shifting the chain to the largest sprocket while putting the chain whip on the smallest and pedaling forward...

Canti's are a little harder to setup since you also have to adjust how far the the pad sits from the brake arms. Moving the pads farther from the arms can dramatically increase your stopping power....
