@Lugnuts001 - I'd swop the stock 7 speed (13-28) cluster for an 11-28 cassette. This will give you a taller top gear, without affecting the lower ratios.

PDR - you can change the sprockets on the two speed if you want slightly higher or lower ratios. However, a big jump in sprocket size is limited by tight tolerances at the rear.

John, I had the similar problems with the Pantour suspension hub. IMO, a wider tyre at lower pressure is a lot less troublesome/expensive.

It doesn't surprise me that many bikes don't utilise disc brakes, but hub brakes would make a lot of sense, for a lot of riders.
