I'm running a 28-42 SRAM X5 mountain crankset up front on my Vaya and it's great for touring, but I'm guessing the OP would need to change their rear derailleur if they went down that route.

Check out Moving Comfort for good sports bras. They work pretty well for me when cycling, but you're always going to have that dripping sweat feeling no matter what you wear if it's hot enough.

Here's my Vaya with Arkel panniers and handlebar bag. The Brooks Cambium is gone now though -- I tried it for too long and continued to hate it.
