The SA 3 and 8 spd hubs are different. I had a SA 3 and could shift while pedalling but mot the 6 though. The manual car analogy is no good since you are not the engine in your car.

Yes you do have to stop pedalling for a split second. You can slacken off the pressure like you said but then that won't ensure that it will shift. Either way it is annoying.
