I've had good luck with Orange Seal. I've only had one puncture that it wouldn't seal, but it was a slice about 12mm long. Also seems fairly easy to clean out when changing tires.

Up to about 10 to 12 mph, I won't change my route. Up to about 20 mph I will ride a route that is mostly crosswind. Over 20 mph and I will bail. Add in cold temps and those numbers will decrease...

I don't show the current or average speed on my Wahoo while riding. If I'm trying to maintain some arbitrary speed, I'm not doing what I set out to do and that is enjoy the ride.
