If you swap out the RD to an XT you won't have a problem. That's a huge gap for the 105 RD to cover. XT RD is easy with a tanpan.

Shimano sponsored our local XC race series this week and they had GRX on display. It's your standard stuff but the shifters are what's the best part. They are small and have ridges on them for grip....
