I have a Spin Doctor gauge, and had the same problem using the presta valve. I got around that by using a shrader adapter, and checking pressure on the shrader side of the gauge.

I don't have a Stinson 7, but I have a Marin Nail Trail 6. Admittedly my bike cost a few bucks more, but if it's built anywhere near as solid as my Nail Trail, it will serve you well.

You can look and see the chain rubbing if it is indeed rubbing ( put a piece of paper between your chain and the derailleur cage, and move your crank arm backwards, if it's rubbing it'll be obvious)....
