I'm not a big fan of Shimano pads either. I replaced the pads on my Merckx's Dura-Ace 7700 brakes with Jagwire pads & they are definitely an improvement.

You can replace the 5 speed freewheel with a 6 speed. I have done it on all of my 5 speed bikes. If you change to a 7 speed you will need a longer axle & need to spread the rear triangle.
