Fastest century I ever did was 5 hours ride time. It wasn't flat, I wasn't over 50, and there was at least an hour of accumulated rest stop time.
My normal centuries are more like 6.5 hours total...

I do a lot of out of the saddle, big gear, low cadence climbing. It's how I get a good workout while staying at the slower speed of my riding buddies, who sit and spin. I also like how it feels.
