All my gear is Assos, Accumulated over about 6 years. Absolutely the best kit I've ever owned. I generally use chamois cream but I've ridden without it with no ill effects.

No. My rides are never more than about 30 miles and all in a local loop. And, I only ride solo or with my gf. We live together. Given all that I don't see the need for it when cycling.

My 2019 CAAD 12 is 105 and cost me $1350. The new CAAD 13 can be had with all the components you mentioned. You can find a lot of AL bikes with 105 and Ultegra. Not sure why you think you can't.
