I used to love riding those trails in Kettle Moraine when I lived in Chicagoland. Don’t know that you could pay me to do it on a vintage bike like the OP’s Mercier. That’s a courageous choice.

IMO, the “before” build exaggerated the bike’s gigantic appearance. Forks and stem made a huge difference. Well done!
