650 truly a viable gravel wheel size

never had the chance to ride a 650 gravel bike but seems very jeep like to have a off road 650 wheel big juicy tire bike for dirt but on the road?
I am currently leaning towards as means to go...

im 55 good shape little fat but ok fitness. i find early in my rides going hard is limited by lungs for 1st 5 miles or so.
become breathless...but warmed up its the leggs that go 1st

mulleting of 26 incher to 27.5 as i could use a better longer shock...80 mm now old pilot RS...need new front wheel but curious if more travel bigger tire will ruin the bike.

i smackid my nutz on bars and shoulders into trees alot.
still cannot fully rotate left shoulder after hitting a tree..
a good ride often...

needed cleaning gunked from age lack of use.....
