They get sort of brittle over time, so I'd suggest to not take them off or deform them. Just leave them on the levers, and work around them.
Gum hoods for Campagnolo and Universal are being reproduced and readily available, but I haven't seen any Shimano replicas yet. Until then we have to make do with what's left, which isn't much.
