I don't understand this. Please explain. Does my repurposed mountain bike offend you in some way or violate the spirit of the original question?
OP said, "... can be done tastefully, isn't visually jarring and in a way that compliments our classic aesthetics. ... So, let's see your setup. Road bikes, gravel, mountain/ATB, porteur, 60s vintage, 90s vintage, whatever, I want to see them all."

One of the many incarnations of my '72-ish Humber, this one on cargo duty. 1x5 with a Sunrace thumb shifter and a Shimano long cage (Tourney, perhaps?). Those are Greek military surplus bags with a homemade wax job. The bike is now a drop bar 1x3 IGH. Nice riding cheap bike.

My Dawes Galaxy, mostly an around town bike. Suntour 7 GT rear derailleur, 7sp freewheel. Sugino Mighty(ish) crank with (I think) 44T chainring. This isn't the best setup. On the one hand, I managed to squeeze in seven cogs. That forces me to use a 7/8sp chain, which is probably too flexible for the sluggish SunTour derailleur. I might switch back to a 6sp freewheel so I can use a less flexy chain.

Yours is awesome!
Yes, the bars and saddle were really important elements in my build, as were the big, soft tires. These things make a huge difference over a road bike. It's a completely different ride.
I do have a chain guard, I wanted it for function as much as style. The trouble is, it cannot fit between the chain ring and the crank arm, so I cannot install it. I'd have to buy a different crank (which I am not going to do).

My '85 League Fuji, when it was a 1x6.
I bought it as a single speed, then immediately put gears on it. NIB Superbe RD and 14-26 6-speed Pro-Compe from the parts box, Trek Matrix ISO-C / 600EX rear wheel and KMC chain from the co-op. OG Sugino RT 110 double, with its 42 inner ring and the LaPree levers were on the bike when I bought it.
Rode it that way for about a year and a half. It's now a 45/42/30 half-step triple, and I like that better, but the 1x6 does not suck, at least not for short rides in mild terrain.
