Really...when a new chain skips, that's when you know the cassette is worn. There's no real way to eyeball it or even measure it (this thread is demonstrative of that). There was another recent thread (I think it was different from this thread) where someone installed a new chain and a new cassette, and the chain still skipped. What's the last variable? Chain rings (and a new chain ring fixed it up).

That being said, I'll probably be taking the original wheelset into the LBS for tensioning/truing so I'll probably replace the cassette for good measure at the same time.
